I’m using a service that forces us to use their custom DNS nameservers, and I still want to use Cloudflare optimizations and protections. Is that possible?

The mentioned link has nothing to do with your situation.
As long as your hosting provider doesn’t let you use another DNS you cannot move to Cloudflare.
