Currently using Cloudflare as a CDN for my website: https://kopfoderzahl.org/.
Planning to change hosting providers and update DNS records in Cloudflare.
Unsure if this process will lead to any downtime.

Assuming both origins are operational for the time it takes the TTL to expire on the changed DNS record (5 minutes if proxied), then you should be ok. If proxied you may want to purge your cache as well at that time if the site is different.
