Why should I modify my domain's NS record to CloudFlare?

I just want to know the reason that people should modify their domain’s NS record to Cloudflare’s when they use the free version package.

Because you need to point your domain to Cloudflare’s nameservers.

My scene is that I have bought a professional DNS service and I would like to have a CNAME record or some A records to let my domain take effect.
I would not like to set NS records on Cloudflare.

If you cant set the nameservers you can only sign up for a business plan, where you can use a CNAME setup or not use Cloudflare.
