Website IP revealed for proxied site

I have an ecommerce shop that uses Stripe at checkout, and this site has its A IP address proxied.
If I use a domain to IP tracking service, the domain IP is the one that belongs to Cloudflare (as it should be).
However, when checking the Stripe transactions logs, I can see my real IP there (not the CF proxied IP).
Is this normal? I don’t understand why Stripe can see my IP, as I understood ALL requests are proxied.

Your server is functioning as the client to the Stripe server. Your server iniates outbound requests to Stripe. You can see the IP used for yourself by using curl https://icanhazip.com/.

Somehow I thought that ‘proxied’ means 100% anonymous.
