Web host hijacked our DNS

Our current webhost has their own corporate cloud flare account, which we do not have access to. I want to switch to my own account (I’ve set up a free account already, eventually a paid account). Is it safe to assume that the DNS settings that cloudflare automatically discovers when creating the domain will allow for a seamless transfer? Im trying to avoid Email disruption, mainly, but also web, etc.

From my perspective, it seems ok, but I have never done this with Cloudflare before and was wondering if anyone has any experience with it.

Without knowing the web host or the domain, we can not assess the situation. You would need to ask your web host if they added your domain to Cloudflare. And if they did, ask them to completely remove your domain from their Cloudflare SaaS configuration.
