new to Cloudflare and am wondering if I really need to change my name servers to Cloudflare of if I could just point the DNS A record of the site I want to protect to Cloudflare? I could not find anything in the articles.

If you for some reason cannot delegate the root domain to Cloudflare, the other option you would have, would be by using a Partial setup:
I am curious though, what made you worry about this?
