I set up a captcha on a site using Turnstile
I see that in some cases I have 4 cloudflare cookies named google-analytics_v4_nzcr*
Do these cookies send data to Google?
Can we deactivate them?
To comply with GDPR, I no longer use Google Analytics
Otherwise can we have the description of the different cookies to include in the privacy policy?

Turnstile itself doesn’t set those cookies.
They are cookies used by cloudflare.com and/or the dashboard or related marketing pages. They are also sent to Turnstile because it uses challenges.cloudflare.com as domain and those marketing cookies have a broad same-site scope.
Normal people that don’t visit Cloudflare marketing pages won’t have those cookies set.
