I want to move our domain to Cloudflare. If I add the domain and purchase professional - does Cloudflare create the DNS records in the account without affecting the current dns (hosted by virginmedia) and can we leave it like that until we are ready to move?

When you add the domain to CF, the records are imported without affecting the existing host.
