Looking for steps for changing email providers
I read up on how to transfer domain and started the process of transferring my domain to Cloudflare.
My old provider only offered Google Workspaces, and I wanted to use Outlook - what steps should I do to change email providers? And what problems should I be aware of?

Cloudflare does not sell mailboxes. They have a free forwarding service called Cloudflare Email Routing that can be used to deliver inbound email to a mailbox hosted elsewhere. It doesn’t include a means of sending email and is extremely unlikely to be what you are looking for.
It’s not clear from the way that you used the word Outlook whether you mean the Microsoft desktop email application or the Microsoft hosted email service. Either way, you will need to ask your new email service provider, for their DNS requirements. Once you know what they are, you will be able to ask more specific questions here and we can provide more actionable answers.

(I should have specified I wanted to use Microsoft 365’s Outlook email service as opposed to Google Workspace.)
Thankfully, I found someone willing to do everything for a small fee, which is a relief since I don’t under that stuff at all. (Total non-techie here. Lol.)
