“mail” itself is proxied but most likely used in the context of your MX record. All records in this context will be “unproxied” on the fly as Cloudflare does not handle email, hence there is a dynamic record created which allows for direct unproxied SMTP connections to your mail server.
It is that record which “exposes” that IP address and why you get the warning. If you don’t want the address “exposed” you could only use another IP address as mail server or switch to a dedicated mail provider.
