I have a site I host at NixiHost, but have the DNS for the site here. I need to get an SSL cert, but not sure if this is possible with the DNS divorced from the hosting. Anyone have experience with this? TIA!
Using Cloudflare SSL to front an origin server that doesn’t have SSL is not recommended. Doing so means traffic from Cloudflare to your origin server is not encrypted and so is exposed, but your site users will think their data is protected as they see a secure connection to Cloudflare.
You should arrange to get SSL running on your origin server first, and then when working you can add Cloudflare for the CDN and other features. With both set up with SSL you have a fully secured connection.

Also if your host lets you upload a custom certificate then you can generate and use a long-lived Origin CA Certificate that only works with the Cloudflare proxy:
This lets you setup SSL on your origin host without having to manage certificate renewal there, if that’s convenient.
Is it possible to just transfer the DNS to NixiHost even though I just registered it a few weeks ago?

Why would you need to change the DNS provider? If you change the DNS servers, you will not be able to use Cloudflare.
If the domain registration was purchased using Cloudflare registrar, you cannot change the nameservers without first transferring the registration to another domain registrar. There is a sixty day transfer-lock that follows any domain registration, transfer, or changes to certain contact data.
