I configured 3 rules to block traffic - screenshot of account attached. They show as enabled and active. They are still not blocking traffic 2 days later as shown by a 3rd party monitor I use for our website.
It looks like your DNS records point right at Shopify, so any settings you have aren’t going to apply.
Do any of your analytics indicate that traffic is going through your account?

Given that all shopify accounts are required to have the record www CNAME point to them, and only being partially confident in adjusting DNS records, what record would you create?

Not totally sure I follow. The analytics are purely based on tags being triggered on the served webpages. So if by “my account” you are referring to Cloudflare" I would guess no.
