We are getting random 526 errors for our app.personizely.net (not on each request). If we disable cloudflare for this subodmain, it works fine and SSL Checker says the certificate is ok.
What steps have you taken to resolve the issue?
I have switched SSL to Full instead of Strict, and it seems to work, but I am not sure how reliable that is.

It is hard to reproduce consistently as the errors are random.
Not at all I am afraid, as that is insecure. It should always be Full Strict.
It does not surprise me that you say it works when paused, as it seemingly also works most of them when not paused and only occasionally throws a 526, which means it willl also occasionally show you an invalid certificate when paused. I would keep it paused and analyse the issue on the server. Your server most likely returns at times an invalid certificate.
