I’m interested in knowing the settings that I should Adjust in order to optimize the experience of my customers at the site in terms of speed.
I run a Magento CE 1.9.XX site on Nexcess servers.
Any tips and pointers will be appreciated

Not sure for specific settings, but you should make sure your static pages (possibly including product pages) are set up with a “cache everything” page rule. Note that you should NOT set “edge cache ttl” or “browser ttl” in case these pages include confidential cookies.
A shopping site is still going to hit the server pretty hard. Cloudflare does best with caching static files. All your dynamic pages still have to be served by your server.
