I am used to working with cpanels, but we have a subdomain with you Cloudflare, that I would like to point to a different hosting, to do so, I need to point it to dns1 & a dns2 address - but i’m being told that subdomains can only be pointed to one? I’ve never not been able to point a domain or subdomain to a different hosting before - very weird.

If you just want to use the subdomain as a hostname, you only need add an A record of the server’s address.
You would only add NS records if you were creating a delegated child subdomain that was to have its DNS managed elsewhere and not use the Cloudflare services.
