My MX records for setting up google gmail keep disappearing which prevents sending/receiving emails?

The usual reason DNS records appear to delete automatically is that you provided Ezoic with an API key, and they are managing the DNS records from their system.
Are you using Ezoic?
You can also check the Audit Log from the dashboard, which will give you an indication of who is deleting the records.

Yes I am using Ezoic! Thank you that pointed me in the right direction, I think I’ve resolved it
