The Italian Authority for the registration of domains with the .IT extension (Nic-IT) gives a negative result and does not accept my request to change the name server.

That is the format of a synthetic MX hostname created by Cloudflare. It is generated when you proxy the hostname used in your MX record. You can eliminate it by using a unique hostname in your MX, such as mail.example.com and ensuring that the corresponding A/AAAA records are set to DNS Only.
