support.cloudflare.com should provide a good introduction to Cloudflare, otherwise I’d consider hiring a consultant. There are plenty of sites where people offer their services, just be careful, many claim to have knowledge they don’t really have.
Currently your site and your Cloudflare account are insecure. For starters, you should change the encryption mode on Cloudflare to “Full Strict”. Mentioned article has all details on that.
As for the mail issue, you should make sure all mail related hostnames are set to . Email Troubleshooting has more on that.

No worries. Generally it is a good idea to make sure the site loads fine on HTTPS before adding it to Cloudflare.
It always has loaded ok. I’ve made all the changes. Will that sort out my issue with Outlook?
The address you currently have configured can’t load fine on HTTPS as it does not respond in the first place.
But are these the right addresses to begin with?

I have changed the encryption mode. It’s now Full (strict)

I’d pause Cloudflare for now, you can do so on the Overview screen at the bottom right, and make sure the site loads fine on HTTPS. You will need to talk to your host about the first. Once it works fine you can unpause Cloudflare.
Yeah, as I mentioned you best discuss this with your host. Only they can fix that.
