We currently have the security level set to medium but it seems like it could be blocking more. I want to see if we can setup a configuration rule for some hostnames and set it to high but only log to see what would be challenged. We have over 3000 hostnames so would like to test before just changing it globally

There is not a log option for the security level specifically, but you can see the behaviour it works on and craft a custom rule with the same criteria:
