I'd like to ask for a log for when the website changed the nameserver because I need it for evidence please

One of my client has moved the nameserver away from my CF nameservers. I need to get a log file as an evidence because she might sue me…

Nameservers can’t be changed on Cloudflare registrar domains, so it sounds like you need to contact the domain registrar for this information and audit log.

As @cherryjimbo suggested the most authoritative way to confirm this would be to ask the domain registrar for a change history, so you can know for sure.

As a general tip on this, there’s a couple of things on the Cloudflare side you can check:

  1. We send an email to you when we detect the nameservers have moved, the subject line in English is like this: [Cloudflare]: The nameservers for example.com no longer point to Cloudflare
  2. That event should also generate an audit log: Review audit logs · Cloudflare Fundamentals docs

And outside of Cloudflare, depending on the TLD of the domain, there are lots of sites out there that scan the nameservers for all Internet domains regularly and keep a history, for example:
