Ah, yes. That sure does looks like it comes from Cloudflare. My record doesn’t have it, but command line dig shows it. Good to know.

They actually seem to be part of the record. I checked a non-CF site’s DKIM and they also show double quotes there. So it’s probably the user interface that eliminates them.
However it is, I think it would be a lot harder to find the extra space character without the quotes
