How about mail send is displayed as the Cloudflare registered email?

Cloudflare does not process outbound email. There is no SMTP server for you to set at Gmail.
The new Mail Routing feature is only for email addressed to you at your domain, and Cloudflare will forward it to the address of your choosing. That is all it does.
