I know that Cloudflare probably does not cache Checkout pages. I build funnels using Cartflows and the I have over 10 checkout pages. All of them have “CHECKOUT” word, followed by a product name, for example, “t-shirt-checkout” or “jeans-checkout”.
How can I bulk disable all the checkout?
Can I do it by going to page rules and then in the URL inserting:
to exclude all the sites having a word CHECKOUT in the url name.
Is that correct?

Yes, you can achieve to disable caching with the Page Rules following the path you want with the option “Caching Level: Bypass”.
domain.com/*checkout* in a Page Rule, because
/checkout* would match only the pages like:

If we have a page rule set to match:
It will match both http://example.com and https://example.com. You do not need to specify http:// or https:// to match in the page rule, unless you want to limit it to only trigger on that protocol. You do not need a wildcard (*) to match both http and https.
In page rules, the asterisk (*) can be used as a wildcard, for instance, if we have a page rule set to match:
