We need to Geo-Fence/Block EU users for the subdomains in order to restrict and be compliant for GDPR.
How will I able to achieve this using Cloudflare?

There might be a “EU” filter on higher level plans, but because I’m lazy, I’d use a Firewall Rule that included a list of EU countries.
I’m not sure if you’re trying to Block, or Allow EU countries, but it’d go something like this (you can use Is In, or Is Not In):
