I am a little bit confused with this topic. I have heard and read different opinions about it or maybe I am mixing something up here…Is it possible to have Cloudflaire on domain test.com but not on subdomain.test.com?
You can set your subdomain DNS records to 
(DNS Only), and your 
domain will continue to benefit from Cloudflare security and performance features, while the subdomain will only have its DNS at Cloudflare.

You should also be able to delegate a subdomain child zone to other nameservers as well, if that is what you need.
