Am I correct in understanding that as long as I’m using Cloudflare in any capacity, that I cannot use my EV SSL (unless on a Business or Enterprise plan)? So, even a gray cloud doesn’t change the fact that visitors will only get the CF sni SSL cert?
If you are bypassing the proxy (
) you have complete control over your certificate. However you wont be able to use the performance and security features of Cloudflare.
That being said, EV certificates are being phased out right now.

Grey cloud will bypass the Cloudflare proxy completely, but it will show whatever certificate you have on your server.
EV Certs are about as effective as a site seal.
