Edge Certificate keeps changing every 3 months, i want to revert back to the old certificate until we release a new version of the app, is that possible?

How come if you are specifically referring to the certificate? So what is the setting?
However, certificate renewals every three months is nothing unusual. The proxy certificates are completely managed by Cloudflare and you can only get better control by subscribing to ACM, but even then you might not be able to specify the validity period.
You could upgrade to a Business plan where you can provide your own certificate, however that all should generally not be necessary.
