Existing registrar allows me to change A records to one IP address, but Cloudflare is giving me two names eve.ns.cloudflare.com and ryan.ns.cloudflare.com. Seems like square peg in a round hole.

You are not supposed to create A records, so you are probably in the wrong menu. You need to change the nameservers, and they always have names.
This is the problem… 
Easyspace only allows me to change A Records and not the DS records (if that’s what I should be doing).
Does it not work as described here?

I can see that option on my other domains, though the image is different, but not on the one that I have done a “Domain Transfer” on.

You can’t do a domain transfer until the zone is already active on Cloudflare, which requires you to change the nameservers.
The transfer should fail in 5 days, so then you can try again.
I did the “Domain Transfer Out” on 3rd June…
I had expected it to work with nothing more to do, but nothing has happened.
Can you share your actual domain so I can take a look?
I might have confused the issue by creating an account tonight and putting that domain in… when my son had already made an account at the start of June.
I think you will need to contact EasySpace support. The transfer did definitely not happen, and you should be able to change your nameservers in EasySpace.
