The DNS for that domain is managed by Cloudflare and not by cPanel so any values on the cPanel side would not have any effect on the DNS values of that domain:

simon.ns.cloudflare.com.
reza.ns.cloudflare.com.

We contacted Cloudflare support for assistance but they claim we should pay to point domain to the correct IP.

Due to security we can not make it public! So, it is quoted NS1.ourXXXdomainXXX.com

Out of curiosity, … what kind of security issue do you believe you have, that makes it impossible to share your domain?

Domain names and DNS data is technically public data, as otherwise, no one would be able to reach your domain (and/or services).

Change the Proxy status for the relevant DNS record(s) to Unproxied (:grey:) / DNS-only.

In this case, that would be the DNS record(s) named ns1.
