I have a list of DNS records that my domain provider wants me to add in Cloudflare, in order for the emails to work. One of which is > > > > mail.my-website.ro, A, -ip-, (DNS Only)
However, when I save this record, it gets auto renamed to only ‘mail’, instead of mail.my-website.ro.
Should I be concerned that it won’t work?

That’s normal. Subdomains in DNS hide the domain name on the screen, since that’s redundant. If you use the Import/Export option to export the zone file, you’ll see the raw DNS record that includes the domain name.
Or you can use dnschecker.org to see if that hostname resolves. Just make sure it’s set to 
DNS-Only, since Cloudflare doesn’t proxy email.
