DNS 'A' Record doesn't support non IPv4 as target value (AWS API Gateway)

I want to set up a custom domain for my API Gateway, on AWS. but Cloudflare is not letting me add my “API Gateway domain name” from AWS as a value in ‘A’ record of DNS

You need to create a CNAME record instead. A records contain an IPv4 address.
