If I block a visit from America. Will I block the Google robots too?

Are you referring to traffic from Google Crawler? AFAIK, Cloudflare has whitelisted known/good crawler hence it won’t be blocked.

Not if you actually block the US. With an explicit block you will still need to exclude known bots.
