I set Cloudflare CNAME to github io, but it always turn to gitbook io. I don’t know why. And I have not set any 301. Once I cancel Cloudflare DNS clould proxy, it normal. But I have wait for it long time and clean any cache in Cloudflare.

Did you previously use Gitbook?
yes. I have set gitbook CNAME .

If you have moved away from Gitbook then you probably need to ask them to remove their Cloudflare configuration for your domain.
I have cannel gitbook custom domain, even cancel any gitbook domain. But it always jump gitbook website login page.
