With regards to the cloudflared tunnel, when creating a hostname there are TLS options for NOTLSVerify, however I notice that option is not available for the catchall entry
Is it possible for the catchall to also perform NOTLSVerify

Are you making your tunnel through the dashboard or with a config file? You might need to use the API to have it for the catch all rule.
I am currently using the dashboard - I will search the API config and attempt that
