Cloudflare DNS and hosting

I don’t understood well why I have to add the Cludfare DNS at my domain register to use the CloudFare services, as CDN or HTTPS/SSL protocol.
If I change my DNS server, in my site register, I lost access to my site files?
I have to copy my site to Cloudfare Host?
Someone can help me?

CF acts as a DNS and HTTPS provider.

Your hosting provider must provide either an IP address to add at Cloudflare, or provide a CNAME you can add. You may be able to get this from your hosting provider’s support if it’s not in your hosting dashboard.

I still don’t understand how CloudFare works with DNS and site hostings. Links do not respond answers, words yes… :^/
