Cloudflare Cache / External Javascript libraries

Maybe a stupid question - but I see that assets like Google Analytics are not cached as Cloudflare does not act as a proxy between the user and Google. Does this also hold true for other externally loaded javascript libraries? Like say I was loading JQuery from google’s CDN - does Cloudflare cache that javascript? Or various scripts hosted at other resources like Salesforce/etc?

You are correct. Anything that’s not on your domain doesn’t go through Cloudflare and can not be cached by Cloudflare.

Unless they happen to use Cloudflare and it caches through them…but I’ve never seen that be the case…with the exception of CDNJS. Some developers use CDNJS, and those Javascript libraries use Cloudflare.
