Cant add DS Record (DNSSEC) in my whois stands the NS from Cloudflare so the DNS-Settings from my hoster gets ignored

You need to add DS records at your domain registrar, not at Cloudflare.

DS records aren’t added to your nameservers, but to the parent nameservers (so for example.com, the DS record is added to the .com nameservers), and this can only be done by your registrar.
