I have my own domain name, I currently use Google Apps to manage the email side of things. If I also want to use the same domain name for the tunnel, must all the DNS records point to Cloudflare? Can I leave the email settings still pointed to Google for email services?
Welcome to the Cloudflare Community. 
You will need to host your DNS records on Cloudflare, but you definitely will want to keep your MX records pointed at the Google mailservers. Make sure you have your Google DKIM and SPF records set up in your Cloudflare DNS, too.
