GoDaddy cannot setup SSL on subdomain because there is a CAA record blocking it. GoDaddy message: " At this time, your Cloudflare name servers have a CAA record that is preventing issuance of the SSL. We recommend you contact Cloudflare to remove those CAA records". How to remove the CAA record and not affect the rest of the domain?

Right now, myvitalc.com has CAA records that look like the default Cloudflare ones, and that doesn’t include Godaddy. But the specific hostname you mentioned, longevitysecrets.myvitalc.com, has a CAA record added that should let Godaddy issue a certificate for just that specific hostname.
If you want to allow Godaddy to issue certificates for any name in the myvitalc.com domain, without affecting any other Cloudflare settings on the domain, you can add a CAA record there for Godaddy. It would look like this:
