I moved email from office365 to gmail, adjusted settings accordingly, deleted the autodiscover, but it continues to show up when pinged and makes setting up email clients a pain.

Sorry, can you share a screenshot of your DNS records. It record is there and has a 5 minute TTL so it shouldn’t be cached this long.
Ah, the wildcard * records will do it. It means that Cloudflare will say that any DNS record exists.
$ dig +short @1.1.1.1 this-record-does-not-exist.paragontile.com
172.67.156.113
104.21.90.122
