I am attempting to add a sub-domain to our DNS, a relatively simple task using other service providers and am unable to find instructions or assistance.

Adding a subdomain to your Cloudflare DNS is just as simple task here as it is with any other DNS service provider. This community Tutorial describes how to add DNS records. Just create one for the name you need.
