Adding a dkim record with a wildcard is not working (Invalid selector)

I can’t use a wildcard when adding a dkim record to my domain (i want to deny emails for this domain, as explained here - https://www.cloudflare.com/learning/dns/dns-records/protect-domains-without-email/)

Add the record from your DNS settings directly, not using the wizard thingy. Just add a TXT record with the name *._domainkey and the appropriate value. The wizard is trying to be helpful by not letting you add something that will break your email, but breaking your email is what you want, so you have to do it manually.
