If your record is proxied, then Cloudflare will publish Cloudflare IPv4 and IPv6 addresses for it, regardless of if you have A or AAAA or both record types in your Cloudflare DNS. This allows IPv4 or IPv6-only origin connections behind the proxy.

Enterprise users can disable IPv6 at the edge using the dashboard. Other accounts need to use the API. For most users, it’s not necessary.

Otherwise, what is the domain/subdomain?

Do I need to uncheck proxy for every A record then?

If you do that, you won’t be using any Cloudflare features or protections.

What reason do you have why you don’t want to publish IPv6 addresses? You don’t need AAAA records in your DNS. Cloudflare’s proxy can accept connections using IPv6 from website visitors and pass those requests to an IPv4-only origin. If your origin doesn’t support IPv6, it’s not a problem.
