I need to add one of (or possibly all?) of the above records so that my domain will resolve. I’m guessing this is why email has stopped working since going through Cloudflare. I know this is a well discussed issue but I just don’y know which records I need to create. Is there a way to find out exactly what I need?

Your host/provider(s) or your old DNS provider should be able to provide a list of the required records.
