520 Errors Across Multiple Servers for the last 2 days

Random 520s - No connection recorded to the server. The 520 is instant and doesn’t seem to try and connect.

What steps have you taken to resolve the issue?

Switch SSL mode from Strict to Full and turning off 0-RTT Connection Resumption. Still continues.

Totally random. If you leave the browser session and then try and continue it usually triggers the 520

So, this 520 error only happens when I disable the cache for certain pages, like the checkout.

The problem with this is PCI4 DSS compliance and the nonces that Magento uses. The nonce regenerates on page load however Cloudflare for some reason begin 520 erroring when you tell it not to cache certain resources like JS or the checkout.
